Mac 'N Cabbage
- 2 c. cooked elbow macaroni
- 2 c. chopped seeded cucumbers
- 1 1/2 c. thinly sliced red cabbage
- 1/4 c. sliced celery
- 1/4 c. sliced green onions and tops
- 10 cherry tomatoes, cut in 1/4's
- 1/2 c. reduced fat salad dressing
- 1/4 c. reduced fat sour cream
- 2 tsp. lemon juice
- 3 to 4 tsp. Dijon style mustard
- 2 tsp. lemon juice
- 1 tsp. white vinegar
- 2 Tbsp. minced parsley
- 1 1/2 tsp. dried dill weed
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- Combine macaroni, cucumber, cabbage, celery, green onions and tomatoes in a large glass bowl.
- In a separate bowl, combine remaining ingredients.
- Spoon over macaroni mixture and toss. Cover with plastic wrap and refrigerate several hours for flavors to blend.
- Makes 12 servings.
