Pepper Steak And Rice
- 1 1/2 lb. sirloin steak, cut into 1/8-inch thick strips
- 1 Tbsp. paprika
- 2 cloves garlic, crushed
- 2 Tbsp. margarine
- 1 c. sliced green onions with tops
- 2 large fresh tomatoes, diced
- 2 green peppers, cut into strips
- 1 c. beef broth
- 1/4 c. water
- 2 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- Sprinkle steak with paprika and set aside while preparing other ingredients.
- Brown garlic in margarine and add steak, onions and green peppers.
- Continue cooking until vegetables are wilted.
- Add tomatoes and broth.
- Cover and simmer on low heat about 15 minutes.
- Blend water with cornstarch and soy sauce. Stir into steak.
- Cook until thickened.
- Serve over fluffy rice. Makes 6 servings.
