Barbecued Duck Breasts
- 4 boneless duck breasts (split from 2 wild ducks)
- 1 Tbsp. baking soda
- 2 Tbsp. coarse salt
- 1/2 cup bottled Italian dressing
- 1 Tbsp. Worcestershire sauce
- juice of 1 lemon
- 1/4 tsp. garlic powder
- 1/4 tsp. ground cloves
- 1 or 2 slices bacon for each breast
- Dissolve soda and salt in bowl of water.
- Soak duck breasts in this water 3 hours.
- Remove, pat dry, and place in shallow pan. Combine next 5 ingredients in plastic bag.
- Add duck breasts, close bag and marinate at least 1
- 1/2 hours (or overnight in refrigerator).
- Remove breasts form marinade.
- Wrap each in bacon and secure with toothpicks.
- Cook on grill for about 5 minutes on each side, basting with marinade.
- Serves 4.
