Fried Rice(Good Party Dish)
- 1 c. Arbario rice
- 1 c. bean sprouts
- 1 c. bean sprout liquor
- 2 c. chicken broth
- 1/4 c. cooking oil
- 2 hard-boiled eggs, chopped very fine
- 3/4 c. cooked ham
- 3/4 c. cooked chicken
- 1/3 c. diced green pepper
- 1/2 c. chopped onion
- 2 oz. cut mushrooms
- chopped parsley
- Wash rice well.
- Using skillet with cover, add 1/4 cup oil. Add raw rice; cover and brown, shaking and stirring so as not to burn.
- Add 1/2 cup each of broth and bean sprout liquor.
- Cover and cook 15 minutes.
- Repeat until all liquid is absorbed and rice is cooked (about 1 1/4 hours cooking time).
- Add onion; cover 5 minutes.
- Add remaining ingredients and cook 5 more minutes, covered.
- Mix carefully.
- Sprinkle eggs and parsley for garnish.
