Coconut Thumbprint Cookies

  1. Preheat oven to 375u0b0.
  2. Grease baking sheets.
  3. Cream butter with sugar, egg yolk and vanilla.
  4. Combine flour with salt and baking powder.
  5. Add to creamed mixture.
  6. Blend well and form into bars about 1-inch in diameter.
  7. Beat egg white until slightly frothy.
  8. Dip dough balls into egg white, then roll in coconut. Place on greased baking sheets.
  9. Make a "thumbprint" in the center of each cookie and spoon 1/2 teaspoon of preserves into each. Bake at 375u0b0 for 8 to 9 minutes or until coconut begins to brown. Yields 2 dozen cookies.
