Coconut Thumbprint Cookies
- 1/2 c. butter or butter flavored Crisco
- 1/2 c. sugar
- 1 egg, separated
- 3/4 c. unsifted all-purpose flour
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 2/3 c. flaked coconut
- 1/4 c. thick preserves, jam and jelly
- Preheat oven to 375u0b0.
- Grease baking sheets.
- Cream butter with sugar, egg yolk and vanilla.
- Combine flour with salt and baking powder.
- Add to creamed mixture.
- Blend well and form into bars about 1-inch in diameter.
- Beat egg white until slightly frothy.
- Dip dough balls into egg white, then roll in coconut. Place on greased baking sheets.
- Make a "thumbprint" in the center of each cookie and spoon 1/2 teaspoon of preserves into each. Bake at 375u0b0 for 8 to 9 minutes or until coconut begins to brown. Yields 2 dozen cookies.
