Broccoli And Beef Stir-Fry
- 2 tsp. dry sherry
- 1/8 tsp. black pepper
- 2 tsp. soy sauce
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 3/4 c. water
- 2 tsp. cornstarch
- 1/4 c. peanut oil
- 3/4 lb. broccoli flowerets (broccoli stalks cut into diagonal 1/4-inch slices)
- 1/2 lb. flank or round steak, sliced thinly across the grain in 1 1/2-inch long strips
- Mix first 5 ingredients and 1/2 cup of water; set aside.
- Mix cornstarch with remaining 1/4 cup water; set aside.
- Heat 2 tablespoons oil in wok or shallow skillet until hot.
- Add broccoli stalks, sliced.
- Cover and cook 2 to 3 minutes.
- Add broccoli flowerets; cover and cook 2 to 3 minutes or until tender-crisp.
- Remove broccoli to platter.
- Add remaining 2 tablespoons oil to wok; heat until hot.
- Add meat and stir-fry until done.
- Add soy sauce.
- Add cornstarch mixture; stir until slightly thickened.
- Add broccoli and mix well.
- Serve over rice.
