Wilted Deli Cole Slaw(Serves 8 To 10)
- 1 large head cabbage, quartered and shredded
- 2 c. green pepper slices, thinly sliced
- 2 c. Spanish or other mild onion rings, thinly cut
- 1 small jar pimento slices
- 3/4 c. sugar
- 1 tsp. dry mustard
- 1 tsp. mustard seed
- 1 tsp. celery seed
- 1 Tbsp. salt
- 1 c. white wine vinegar
- 3/4 c. vegetable oil
- Cabbage is best if shredded in long, very thin shreds.
- In a large 3-quart bowl, layer cabbage, green pepper and onion.
- In saucepan combine remaining ingredients.
- Mix well.
- Heat just to boiling, stirring.
- Pour over slaw.
- Cover with plastic wrap.
- Let stand a couple hours (or overnight).
- Then refrigerate.
- Just before serving, toss salad thoroughly.
