Mother'S Rice Pudding
- 4 c. water
- 2 c. regular rice
- sugar to taste
- raisins to taste
- milk to taste
- cinnamon to taste
- 1 1/2 c. fine graham cracker crumbs
- 1/2 c. butter
- 2 c. plus 3 Tbsp. sugar
- 1 1/2 lb. soft cream cheese
- 3 eggs
- 1/2 lb. semi-sweet chocolate
- 3 Tbsp. heavy cream
- 1 c. sour cream
- 1/4 c. orange liqueur or Grand Marnier
- 3/4 tsp. cinnamon
- 3/4 tsp. almond extract
- 1 c. confectioners sugar
- approximately 1 c. fresh strawberries
- 1 tsp. orange peel
- Mix the graham cracker crumbs with the butter and 3 tablespoons of the sugar, working it together with your fingers until it is all well blended.
- Press the mixture evenly onto the bottom of
- a 10-inch spring-form cake pan, using a potato masher to make a flat crust.
