Sauerbraten Meatballs
- 1 lb. ground beef
- 3/4 c. soft bread crumbs
- 1/4 c. finely chopped onion
- 2 Tbsp. bottled lemon juice
- 2 Tbsp. butter
- 1/4 tsp. salt
- dash of pepper
- 2 1/4 c. water
- 3 beef bouillon cubes
- 1/2 c. brown sugar
- 1/4 c. dark seedless raisins
- 1/4 c. bottled lemon juice
- 3/4 c. gingersnap crumbs
- 1 (8 oz.) pkg. noodles
- 1 tsp. poppy seeds
- Combine meat, bread crumbs, onion, 2 tablespoons lemon juice, 2 tablespoons water, salt and pepper. Shape into 1-inch balls. Brown meat balls in small amount of hot fat. Remove meat balls; add 2 1/4 cups water to drippings and bring to boil. Stir in bouillon cubes, sugar, raisins, 1/4 cup bottled lemon juice and ginger snap crumbs. Add meat balls; cook, uncovered, over low heat 10 minutes. Turn meat balls, spooning sauce over. Cook 5 minutes, stirring occasionally.
