Cajun Spiced Shrimp With Rotelle Pasta
- 2 tsp. paprika
- 1/2 tsp. red cayenne pepper
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. oregano
- 1 tsp. thyme
- 6 to 8 Tbsp. butter, room temperature
- 2 medium garlic cloves, minced
- 1 1/4 lb. shrimp, shelled and deveined
- 12 oz. rotelle (pasta wheels)
- 1 small zucchini, 1/4-inch diced
- 1/4 c. minced green onion
- 1/4 c. fresh parsley leaves
- 2 ripe plum (Roma) tomatoes, 1/4-inch diced
- In a
- small
- bowl,
- mix
- spices.
- Melt 4 tablespoons of butter in a large skillet and add garlic and spices.
- Turn off heat. Add
- shrimp.
- Tossto
- coat
- in
- spices.
- Cook
- pasta according totirections.
- Toss
- with
- 2 tablespoons of butter and set aside.
- Saute shrimp in spice mixture until pink (3 to 4 minutes). Add
- to
- pasta.
- Add 1 to 2 tablespoons of butter to remaining spice mix left from shrimp.
- Add onion, zucchini, tomato and parsley.
- Saute
- for
- 3 to 4 minutes.
- Add to pasta mixture. Serve
- immediately.
- Makest to 5 main course servings.
