Mixed Seafood Tagine
- Charmoula
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon fresh cilantro
- 1 tablespoon fresh parsley
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Tagine
- 1 lb mixed seafood (such as mussels, squid, shrimp, crab)
- 1 (14 ounce) can petite diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1/2 green bell pepper, seeded & sliced
- 1/2 onion, chopped
- 1 -2 carrot, peeled & chopped
- 1/2 cup green olives, cracked & pitted (optional)
- 3 garlic cloves, chopped
- 1 vegetable bouillon
- 1 teaspoon ginger
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne
- Note: Make sure the seafood you are using is already cleaned & removed from the shells.
- Mix the ingredients for the charmoula in a bowl then add the seafood & stir. Let marinate for 15-20 minutes.
- Mix the rest of the ingredients in a large tagine then heat, covered, over medium-low heat for 20-30 minutes.
- Stir the seafood & charmoula in to the tagine then recover & continue to cook for 15-20 minutes.
