Quick Chicken In Wine

  1. Place the chicken in a large baking dish with a tight fitting cover.
  2. Sprinkle with salt and pepper and distribute the onion over the chicken.
  3. Drizzle the olive oil over all.
  4. Sprinkle with parsley.
  5. Cover and place in a 350u0b0 oven for 35 minutes or until the thickest portions of the chicken can be easily pierced with a fork.
  6. Add vinegar and wine; cover again and return to the 350u0b0 oven for an additional 20 minutes.
  7. Uncover and continue to bake for 10 minutes or until the top of the chicken turns a delicate brown and the liquid is reduced by half.
