Orange Raisin Muffin
- 1 2/3 c. flour
- 1/2 c. wheat germ
- 1/3 c. sugar
- 1 Tbsp. baking powder
- 3/4 c. raisins
- 1 c. skim milk
- 1/4 c. vegetable oil
- 1 egg, slightly beaten
- 2 tsp. grated orange peel
- 1/2 c. powdered sugar
- 2 Tbsp. orange juice or 1 Tbsp. lemon juice
- Heat oven to 400u0b0.
- Spray 12 medium muffin cups or line with paper cups.
- Combine first 6 ingredients; mix well.
- Add combined milk, oil, egg and grated orange peel.
- Mix until dry ingredients are moistened.
- Fill muffin cups 2/3 full.
- Bake 18 to 20 minutes or until light golden brown and wooden toothpick comes out clean. Remove to wire rack.
- In small bowl, combine powdered sugar and orange juice.
- Drizzle over slightly cooled muffins.
