Tabouli

  1. Pour boiling water over wheat in a large bowl and let stand for 2 to 3 hours or until water is absorbed.
  2. Mix onion, tomatoes, green pepper and parsley into the wheat.
  3. Mix remaining 9 ingredients in a jar and shake well.
  4. Pour over wheat mixture and toss.
  5. Cover and refrigerate 4 to 6 hours or overnight to allow flavors to blend.
  6. Keeps well for 2 to 3 days.
  7. This refreshing and healthy mix is great with Fritos or tortilla chips.
  8. It's also great when served in pocket bread (pita or Arabic)!
  9. Yields 6 cups.
