Tabouli
- 3 c. boiling water
- 1 1/2 c. bulgur wheat, washed and drained (can be purchased at health food store)
- 1 medium onion, finely chopped
- 2 large tomatoes, diced
- 1 large green pepper, finely chopped
- 1/2 c. olive oil
- 1/2 c. white wine vinegar
- 1 tsp. salt
- 1/2 tsp. sugar
- 2 Tbsp. lemon juice
- 1/2 c. fresh parsley, finely chopped
- 1/2 tsp. garlic powder
- 1/2 tsp. dried basil
- 1/2 tsp. dried tarragon
- 3 Tbsp. fresh mint, finely chopped or 3 tsp. dried mint, crumbled
- Pour boiling water over wheat in a large bowl and let stand for 2 to 3 hours or until water is absorbed.
- Mix onion, tomatoes, green pepper and parsley into the wheat.
- Mix remaining 9 ingredients in a jar and shake well.
- Pour over wheat mixture and toss.
- Cover and refrigerate 4 to 6 hours or overnight to allow flavors to blend.
- Keeps well for 2 to 3 days.
- This refreshing and healthy mix is great with Fritos or tortilla chips.
- It's also great when served in pocket bread (pita or Arabic)!
- Yields 6 cups.
