German Spinat-Kasetortchen(Spinach And Cheese Pie)
- 2 1/4 c. flour
- 1/2 tsp. salt
- 1 stick butter, cut into pieces
- 5 oz. fresh spinach or 1 (10 oz.) pkg. frozen
- 1 1/3 c. milk
- 1/2 c. heavy cream
- 10 oz. Gruyere or Swiss cheese, shredded
- salt and pepper
- nutmeg
- 2 eggs, beaten
- Stir flour and salt into a large bowl; cut in butter until mixture is fine crumbs.
- Then add water, a little at a time, until dough is moist enough to form a soft ball.
- Chill.
- Roll out dough; place in a 12-inch quiche pan.
- Prick with a fork.
- Line with foil and fill with dry beans to hold dough in place.
- Bake at 425u0b0 for 15 minutes.
- Reduce heat to 325u0b0.
- Remove beans and foil. Return crust to oven.
- Bake until golden brown.
- Cool.
