Doves In Wine
- 12 doves
- 2 tsp. salt
- 1/2 tsp. ground pepper
- 1 tsp. paprika
- 1/2 c. melted butter
- 2 cloves garlic
- 1 c. chicken bouillon
- 1 1/2 c. Burgundy
- 1 can drained canned mushrooms
- 1 c. orange juice
- Wash
- doves
- good
- in cold water; drain well.
- Pat dry. Split down middle.
- Mix together flour, salt, pepper, paprika and basil.
- Dredge doves in flour mixture.
- Put melted butter and garlic
- inteavy
- Dutch oven or skillet, covered.trown doves over
- medium-high
- heat.
- Pour
- bouillon
- and wine over doves, cover.
- Simmer, stirring frequently, for about an hour. Add mushrooms
- and
- orange
- juice;
- simmer
- 6 minutes longer. Thicken pan juice with a little flour.
- Serve hot.
