Mexican Meat Loaf
- 2 Tbsp. vegetable oil
- 1 c. chopped onions
- 1 c. chopped bell pepper
- 2 cloves garlic, minced
- 1 tsp. beef bouillon
- 1 lb. ground beef
- 4 oz. Cheddar cheese, shredded
- 3/4 c. bread crumbs
- 1/2 c. tomato sauce
- 1/4 c. plain yogurt
- 2 Tbsp. chopped parsley
- 2 tsp. Worcestershire sauce
- 1 tsp. chili powder
- 1 or 2 crushed red peppers
- Preheat oven to 375u0b0.
- Heat oil in skillet over medium heat. Saute garlic, onion and bell pepper in oil until tender, but not brown.
- Combine all other ingredients with sauteed vegetables and shape into a loaf pan.
- Cook in oven until brown, about 45 to 60 minutes.
- Serves 4.
