Gingerbread Muffins(Low Cholesterol)
- 1 c. unbleached white flour
- 3/4 c. whole wheat flour
- 1/4 c. granulated sugar
- 1/4 c. brown sugar
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. ginger
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. allspice
- 1/4 tsp. grated nutmeg
- 3/4 c. buttermilk
- 1/3 c. olive or sunflower oil
- 1 egg + 1 egg white
- 1/4 c. light unsulphured molasses
- Preheat oven to 400u0b0.
- Grease a 12-cup muffin tin with margarine.
- Combine flours, sugars, baking soda, salt and spices in a large bowl.
- Set aside.
- In a large mixing bowl, combine buttermilk, oil, egg, egg white and molasses.
- Add flour mixture to buttermilk mixture.
- Do not overmix.
- Pour into cups of muffin pan and bake for 15 minutes.
