Healthy Pumpkin Flax Muffins

  1. Mix dry ingredients in a medium bowl.
  2. Mix wet ingredients in a large mixing bowl.
  3. Blend / Mix dry ingredients into wet ingredients.
  4. Let stand at least 10 minutes or cover and refrigerate overnight.
  5. Divide into 18 Foil Lined muffin tins.
  6. Bake at 350 for about 25 minutes or until firm.
