Cabbage Burger Casserole
- 1 lb extra lean ground beef
- 3/4 cup onion, Chopped
- 2 medium carrots, cleaned, sliced
- 1/2 cup tomato juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili flakes (optional)
- 4 cups cabbage, coarsely shredded
- 3 roma tomatoes, chopped
- 3 ounces low-fat cheese, shredded (your choice)
- salt & pepper
- Brown the meat and onions.
- Add carrots, tomato juice, Worcestershire sauce, chili flakes.
- Season with salt and pepper.
- Lightly spray a 2 1/2 quart casserole dish (with lid) with oil.
- Put the cabbage in the bottom of the casserole dish.
- Add the meat mixture on top.
- Top with tomatoes.
- Cover and bake in a 350u0b0F oven for 1 hour.
- Remove cover add cheese continue baking for a further 15 minutes.
