Simple Apple Muffins
- 1 cup brown sugar, packed,divided
- 1/2 cup corn oil
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup apple, peeled and chopped
- 1/2 cup buttermilk
- 1/4 cup walnuts (optional)
- 1/2 teaspoon cinnamon
- Preheat oven to 325-degrees F.
- Grease muffin tins or use paper liners.
- In a large bowl, blend 3/4 cup brown sugar, oil, egg and vanilla with a wooden spoon.
- Add flour, baking soda and salt.
- Stir in apple and buttermilk and mix throughly until combined well.
- Spoon batter into prepared muffin tins.
- In a small bowl combine remaining 1/4 cup brown sugar with remaining ingredients (walnuts and cinnamon).
- Sprinkle over muffins.
- Bake for 30-40 minutes or until muffins are browned and toothpick comes clean when inserted in middle.
