Arminyan Plov (Armenian Pilaf)
- 1 1/2 cups bulgur wheat (kasha)
- 1 onion, chopped
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 2 cups chicken broth
- 1/4 cup almonds, slivered
- 1 1/2 cups chickpeas, cooked
- 2 tablespoons lemon juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/2 teaspoon allspice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon pepper
- 1/2 cup raisins
- sour cream
- Saute onion & garlic in olive oil until soft.
- Add kasha & stir well.
- Add all remaining ingredients except sour cream.
- Bring to a boil, reduce heat to simmer, cover, & cook until liquid is absorbed.
- Top each serving with a generous dollop of sour cream.
