Basic Italian Sauce
- 4 cloves minced garlic or 1 tsp. prepared minced garlic
- 2 Tbsp. olive oil
- 8 cans peeled, crushed Italian tomatoes
- 1 small can tomato paste
- 1 Tbsp. salt or to taste
- 1 tsp. pepper
- 1 Tbsp. basil
- 2 Tbsp. oregano
- 1 tsp. rosemary
- large onion, diced small
- Use hot skillet.
- Put in olive oil.
- Get hot again and add garlic and stir until it starts to turn color.
- Quickly add onion to cool garlic and stir until onions are clear.
- Add all spices and stir well so the spices are mixed in.
- Add tomatoes and turn down to low heat.
- Cover and simmer for 1 hour.
- Add tomato paste within the hour and stir several times.
- Remember to stir from the bottom of the skillet.
- If your skillet isn't big enough you might want to use a bigger pan.
- This is a low-fat and low cholesterol sauce, unless you add pepperoni or Italian sausage.
