Basic Italian Sauce

  1. Use hot skillet.
  2. Put in olive oil.
  3. Get hot again and add garlic and stir until it starts to turn color.
  4. Quickly add onion to cool garlic and stir until onions are clear.
  5. Add all spices and stir well so the spices are mixed in.
  6. Add tomatoes and turn down to low heat.
  7. Cover and simmer for 1 hour.
  8. Add tomato paste within the hour and stir several times.
  9. Remember to stir from the bottom of the skillet.
  10. If your skillet isn't big enough you might want to use a bigger pan.
  11. This is a low-fat and low cholesterol sauce, unless you add pepperoni or Italian sausage.
