Eggnog Mallow Fudge
- 1 1/2 c. sugar
- 6 oz. petite marshmallows (about 3 c.)
- 2/3 c. eggnog
- 3 Tbsp. butter
- 1 Tbsp. corn syrup
- 1/8 tsp. salt
- 1 c. (6 oz. pkg.) semi-sweet chocolate pieces
- 1 c. chopped walnuts
- Butter sides of heavy 3-quart saucepan.
- Place sugar, marshmallows, eggnog, butter, corn syrup and salt in saucepan. Cook over low heat, stirring, until marshmallows are melted.
- Turn heat to medium and cook until mixture boils.
- Continue cooking, stirring occasionally, to 230u0b0 on candy thermometer.
- Add chocolate pieces and cook 5 minutes or until chocolate is completely melted.
- Stir in nuts.
- Pour into buttered 8-inch square pan.
- Cool to room temperature.
- Chill.
- Cut into squares. Yield:
- 36 pieces.
