Chicken And Okra
- 1 to 2 lb chicken wings
- 1 lb. smoked sausage
- 1 lb. chopped okra
- 1 lb. shrimp (if desired)
- 1 (16 oz.) can chopped tomatoes
- 2 large onions
- 2 (8 oz.) cans tomato sauce
- garlic powder to taste
- seasoned salt to taste
- crushed red pepper to taste
- black or white pepper to taste
- 3 to 4 Tbsp. bacon fat or to taste
- salt to taste
- In a
- large pot, put wings, 1 onion, salt, 1 can tomato sauce, red
- pepper, black or white pepper and enough water to cover wings.
- Cook
- slowly.
- Saute sausage to extract grease; don't brown.
- Set aside.tlean and devein shrimp;
- set aside. In a large
- skillet,
- put bacon fat.
- Heat, then add okra and onions. Saute
- until okra is half done.
- Add tomatoes, tomato sauce, garlic
- powder and seasoned salt. Mix with chicken and simmer for 15 minutes.
- Add sausage and shrimp and cook for 2 minutes.
- Serve over rice.
