Apple Rings
- 10 or 12 large cucumbers, peeled and cut in rings about 1/4-inch thick
- 1 c. pickling lime
- 1 c. vinegar
- 1 Tbsp. alum
- 1 small bottle red food color
- 2 c. vinegar
- 10 c. sugar
- 8 broken sticks cinnamon
- 6 oz. red hot candies
- water
- Soak cucumbers in solution of
- 1 cup pickling lime to 1 gallon of water for 24
- hours.
- Rinse
- and soak in clear water for 3 hours;
- drain and rinse again.
- Simmer rings in solution of 1 cup vinegar, 1 cup water, alum and red food color; do not boil.
- Drain and cover with syrup mixture of 2 cups vinegar, 2 cups water, sugar, cinnamon and red hot candies; bring to boil until red hots melt.
- Drain
- rings
- and
- cover with syrup mixture, boiling hot. Pack rings in jar and seal.
