Whole-Wheat Apple Cinnamon Muffins
- 1 1/2 c. flour
- 1/2 c. whole wheat flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 apple
- 1 c. plain yogurt
- 1/4 c. dark brown sugar
- 1 egg
- 2 Tbsp. molasses
- 2 Tbsp. oil
- In a mixing bowl, combine the first 6 ingredients.
- Peel the apple and grate it into another bowl.
- Stir in the yogurt and the sugar until the sugar dissolves.
- Stir in the egg, molasses, oil and 1/4 cup water.
- Stir the flour mixture into the yogurt mixture until just combined.
- The muffin batter will be lumpy.
- Spoon into prepared muffin pans.
- Bake at 400u0b0 until edges start to brown, about 15 to 20 minutes.
- Make ahead and freeze.
- Great for breakfast.
