Banana Drop Cookies
- 1 1/2 cups sifted all-purpose flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 3/4 cup margarine (softened)
- 1/2 cups walnuts (chopped)
- 1 3/4 cups quick-cooking oatmeal
- 1 egg (beaten)
- 1 cup mashed very ripe bananas (2 -3)
- Preheat oven to 375 degrees.
- Lightly grease to large baking sheets with butter or vegetable shortening.
- Sift together flour, sugar, baking soda, salt, cinnamon, ginger, and nutmeg.
- Using a pastry blender or two forks, work the margarine into flour mixture until
- thoroughly mixed.
- Mix the chopped walnuts with the oatmeal.
- Stir into flour mixture.
- Beat in egg and bananas.
- Mix well.
- Drop rounded teaspoonfuls of batter onto baking sheets, about 2 inches apart.
- Bake for 12 - 15 minutes, or until the cookies have browned around the edges.
- Remove from oven.
- Cool cookies for 2 - 3 minutes and transfer to wire racks to cool completely.
