Blackberry Dumplings

  1. In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 teaspoon salt and lemon extract.
  2. Bring to a boil.
  3. Reduce heat and simmer for 5 minutes.
  4. Meanwhile, in mixing bowl, combine flour, baking powder, nutmeg and remaining sugar and salt.
  5. Add milk; stir just until mixed.
  6. (Dough will be very thick.)
  7. Drop by tablespoonfuls into six mounds onto hot blackberry mixture; cover tightly and simmer for 15 minutes, or until a toothpick inserted in a dumpling comes out clean.
  8. Spoon into serving dishes.
  9. Serve with cream or whipped cream if desired.
  10. Yields 6 to 8 servings.
