Bret'S Favorite Spanish Shredded Beef Stew(Ropa Vieja - Old Clothes)
- 1 1/2 lb. boneless beef chuck
- 1/2 c. water
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 bay leaf
- 2 medium onions, sliced
- 2 cloves garlic, chopped
- 2 Tbsp. oil
- 1 (4 oz.) can chopped green chiles, drained (reserve liquid)
- 3 medium tomatoes, chopped
- 2 green peppers, cut into 1/2-inch pieces
- 1 Tbsp. vinegar
- 1/8 tsp. cinnamon
- 1/8 tsp. ground cloves
- Cut beef into 1/2-inch pieces.
- Heat beef, water, salt, pepper and bay leaf to boiling.
- Reduce heat; simmer for 2 hours, until beef is tender (add water as necessary).
- Remove beef from broth; pull apart into shreds.
- Stir beef, onion, garlic, chiles and reserved liquid and remaining ingredients into broth.
- Heat to boiling; reduce heat.
- Simmer, uncovered, for 30 minutes.
- Remove bay leaf.
- Serve with black beans and tortillas.
