Primavera Vegetables With Linguine
- 2 Tbsp. olive oil
- 1 1/4 c. chopped onion
- 1 Tbsp. garlic, minced
- 1 c. sliced zucchini
- 1 c. sliced crookneck squash
- 1 c. green or red pepper strips
- 1 3/4 c. fresh or canned diced tomatoes (reserve juice)
- 2/3 c. (6 oz.) tomato paste
- 3/4 c. water
- salt and pepper
- 1 tsp. dried basil
- 1 (9 oz.) pkg. refrigerated linguine
- sliced ripe olives (optional)
- chopped fresh basil (optional)
- In large skillet heat oil.
- Saute onion and garlic for 1 minute.
- Add zucchini, yellow squash and bell pepper.
- Saute 3 to 4 minutes.
- Stir in reserved tomato juice, tomato paste, water, salt and pepper.
- Simmer for 5 to 8 minutes or until vegetables are tender.
- Stir in tomatoes and basil and simmer 1 minute.
