Primavera Vegetables With Linguine

  1. In large skillet heat oil.
  2. Saute onion and garlic for 1 minute.
  3. Add zucchini, yellow squash and bell pepper.
  4. Saute 3 to 4 minutes.
  5. Stir in reserved tomato juice, tomato paste, water, salt and pepper.
  6. Simmer for 5 to 8 minutes or until vegetables are tender.
  7. Stir in tomatoes and basil and simmer 1 minute.
