French Onion Soup
- 1/3 c. shortening or bacon drippings
- 5 medium yellow onions thin sliced to make 5 c.
- 2 Tbsp. flour
- 7 c. beef stock or 3 cans beef consomme, diluted with 2 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 6 slices French bread
- 6 thin slices Gruyere cheese
- 1/4 c. grated Parmesan cheese
- In 5-quart pan, heat bacon drippings (shortening).
- Add onion; saute over low heat until golden brown, about 20 minutes.
- Stir in flour and brown slightly.
- Gradually add stock and salt and pepper.
- Cook covered over low heat for 30 minutes.
- In 6 heatproof bowls, place slice of toast; cover each with slice of cheese.
- Pour soup over top.
- Sprinkle each with Parmesan cheese. Run under broiler to melt cheese.
- Makes 6 servings.
