French Onion Soup

  1. In 5-quart pan, heat bacon drippings (shortening).
  2. Add onion; saute over low heat until golden brown, about 20 minutes.
  3. Stir in flour and brown slightly.
  4. Gradually add stock and salt and pepper.
  5. Cook covered over low heat for 30 minutes.
  6. In 6 heatproof bowls, place slice of toast; cover each with slice of cheese.
  7. Pour soup over top.
  8. Sprinkle each with Parmesan cheese. Run under broiler to melt cheese.
  9. Makes 6 servings.
