Paleo Chocolate Cupcake And Frosting

  1. Cupcakes:
  2. Pulse together dry ingredients in a food processor.
  3. Pulse in wet ingredients.
  4. Line a 12 cup muffin pan with paper liners and scoop 1/4 cup into each.
  5. Bake at 350u0b0 for 15-18 minutes.
  6. Cool, ice and serve.
  7. Frosting:
  8. n a small saucepan over very low heat, melt chocolate and coconut oil.
  9. Stir in vanilla extract.
  10. Place frosting in refrigerator for 15-30 minutes to thicken.
  11. Remove from refrigerator and whip frosting with a hand blender until thick and fluffy.
