Honey Pecan Cake
- 1 Tbsp. vinegar
- 1 c. cooking oil
- 1 1/2 c. sugar
- 3 eggs
- 1 tsp. vanilla
- 2 c. sifted all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. cloves
- 1/4 c. chopped pecans
- Combine 1 tablespoon vinegar and enough milk to make 1 cup; set aside.
- Stir cooking oil into sugar; add eggs and vanilla.
- Beat 1 minute at medium speed of electric mixer.
- Sift together flour, baking powder, baking soda, cinnamon and cloves.
- Add to creamed mixture alternately with sour milk.
- Beat 1 minute more.
- Stir in pecans.
- Pour into greased 10-inch fluted tube pan.
- Bake in 350u0b0 oven for 40 minutes.
- Let stand 10 minutes.
- Remove from pan.
- Poke holes in hot cake.
- Drizzle with honey syrup:
- Boil together 1/4 cup honey, 1 teaspoon water and 1 tablespoon lemon juice.
