Val'S Beef Stew
- 1- lb beef or pork stew meat
- 2 TBSP instant beef granules
- 1 sm. onion, chopped
- 2 1/2 c. potatoes, peeled and diced
- 2 c. carrots, chopped
- 1/2 c. celery, diced
- sm. can of corn or green beans or peas
- 1/4 c. barley
- 6-oz can tomato sauce
- 1/2 c. instant potatoes
- Put meat in pan and brown in some oil.
- Add barley, onions, carrots and potatoes.
- Add enough water to cover with 2 inches more, add beef bouillon and tomato sauce.
- Bring to a boil, turn heat down and simmer for 1 to 1-1/2 hours.
- When the potatoes and carrots are almost done add canned or frozen vegetables of choice. Let cook to a boil again and then add the instant potatoes to the consistency you want.
- Season to taste with salt, pepper, seasoning salt, garlic salt, onion salt and add a little love!
- If you don't have instant potatoes you can take 1 cup cold water and mix about 2-3 TBSP flour or corn starch to thicken.
- Add to mixture when it boils again.
- I like to make some biscuits or cornbread to serve with it.
- It is also good with some sliced cheese or jelly for the biscuits.
- This is a great recipe to do in the crock pot.
