Potatoes Laritan
- 2 lb. package frozen hash browns
- 1/2 c. yellow onion, finely chopped
- 1/4 c. green onions finely chopped (include some green tops for color)
- 1/4 tsp. pepper
- 1 tsp. salt
- 1/2 c. butter
- 16 oz carton sour cream
- 1 can Cream of chicken soup
- 2 c. corn flakes, crushed
- Saute onions in 1/4 c. butter.
- Sprinkle with salt and pepper.
- In a large bowl, mix soup and sour cream.
- Stir well but do not over-stir, as the cream will break down.
- Stir in the onion mixture and add the potatoes.
- Mix well and pour into a 13 x 9 baking dish.
- Melt the remaining 1/4 c. butter and mix with the crushed corn flakes.
- Sprinkle on top and bake at 350u0b0 for 45 minutes.
- It bubbles up, so make sure the pan is deep enough.
