Cajun Red Beans And Rice

  1. Place beans in a very large heavy kettle.
  2. Add water; cover and soak overnight.
  3. Next day, add onion, green pepper, celery, ham, salt, cayenne and black pepper to the beans in their soaking water.
  4. Bring to a boil over high heat.
  5. Lower heat so that liquid ripples gently.
  6. Cover; simmer for 2 1/2 hours.
  7. Stir in onion tops and parsley.
  8. Turn heat to lowest point and cook, uncovered, for about 30 minutes.
  9. Serve over beds of hot, fluffy rice.
  10. Makes 8 servings.
