Low Calorie Banana-Nut Bread
- 2 1/4 c. all-purpose flour
- 1 Tbsp. double-acting baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 c. margarine
- 1/2 c. sugar
- 1 tsp. vanilla extract
- 1 egg
- 3/4 c. raisins
- 3 ripe bananas, peeled and mashed
- Preheat oven
- to 350u0b0.
- Spray a 9 x 5 x 3-inch loaf pan with nonstick
- cooking
- spray and set aside, or use tube pan. Into
- a small mixing bowl sift together flour, baking powder, salt
- and cinnamon.
- Set
- aside.
- In
- a
- large
- mixing
- bowl, combine margarine and sugar.
- Using electric mixer beat until creamy and light.
- Add eggs and vanilla; beat until thoroughly combined.
- Add sifted
- ingredients alternately with
- bananas, beating
- gently after each addition.
- (Do not overbeat as this will toughen bread.)
