Beef And Barley Soup With Wils Mushrooms

  1. Combine beef and water.
  2. Simmer for 1 hour skimming scum.
  3. Soak dried mushrooms in 1 cup warm water for 20 minutes.
  4. Strain liquid to remove grit.
  5. Chop mushrooms.
  6. Add dried mushrooms, liquid, barley, onions, celery , carrots and seasonings.
  7. Simmer another hour.
  8. Add pureed tomatos and fresh mushrooms.
  9. Simmer 30 minutes.
  10. Adjust liquid and seasonings if necessary.
