Swans Down Angel Food Cake

  1. Measure sifted flour.
  2. Add
  3. 1/2
  4. cup
  5. of
  6. the sugar and sift together 4
  7. times.
  8. Combine
  9. egg
  10. whites,
  11. salt, cream of tartar and flavorings in large bowl.
  12. Beat with flatware whip, eggbeater or at high speed of electric mixer until whites are stiff
  13. enough to hold up in soft peaks but are still moist and glossy.
  14. Add remaining
  15. sugar
  16. in
  17. four additions.
  18. Bake in a 10-inch
  19. tube pan at 375u0b0 for about 30 to 35 minutes.
  20. Cool in pan
  21. upside-down
  22. 1 hour.
  23. Then
  24. loosen from sides and center tube with knife.
