Gita'S Chicken
- 2 breasts of chicken, (skinless and cut into small pieces)
- 1 medium onion
- 1 to 2 carrots
- 1 tsp. allspice
- salt and pepper
- 1 c. chicken stock
- 2 to 3 Tbsp. butter or margarine
- 1 to 2 cloves garlic
- 1 tsp. lemon juice
- 1/2 lb. mushrooms or 8 oz. can
- 1 tomato (finely chopped)
- 1/4 tsp. turmeric powder
- pinch of hot ground pepper (optional)
- 1/4 tsp. sugar
- Melt butter in pan on medium heat.
- Add garlic and onions. Cook for about 4 minutes.
- Add chicken pieces.
- Cook on medium heat for 8 minutes.
- Then add cut up mushrooms, carrots, tomato, allspice, turmeric powder, salt, pepper and hot pepper.
- Cook 4 to 5 minutes on low heat, then add the stock.
- (The stock can be made by boiling the chicken skin and bones in water.)
- Cover with lid and cook for 10 to 15 minutes on low heat.
- Add sugar and lemon juice right before you serve the dish.
- Serve over rice.
