Fruit Cake Cookies
- 1/2 lb. margarine
- 3 c. brown sugar
- 4 eggs
- 2 Tbsp. buttermilk
- 2 Tbsp. bourbon
- 2 tsp. soda
- 6 c. cake flour
- 1 c. cake flour to dredge fruit
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 1 lb. light raisins
- 2 qt. chopped nuts
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 2 tsp. cake spice
- 2 tsp. allspice
- Cream margarine and sugar.
- Add eggs, one by one, beating well.
- Add flour and spice to mixture.
- Mix soda and buttermilk and stir until fluffy.
- Add to batter.
- Add vanilla and bourbon. Pour over fruit.
- Drop on greased cookie sheet.
- Bake at 350u0b0 for 15 to 20 minutes, then lower heat to 300u0b0 or 325u0b0.
