Summer Squash Casserole
- 2 Tbsp. olive oil
- 10 medium summer squash, sliced 1/4 inch thick
- 2 medium red onions, sliced thin
- Mrs. Dash salad herbs
- 1 (10 oz.) pkg. sharp Cheddar cheese, sliced
- 1 (8 oz.) pkg. Havarti cheese, sliced
- salt and pepper to taste
- Preheat oven to 350u0b0.
- Brush a 10-inch round casserole or souffle dish with oil.
- Arrange a layer of squash slices evenly on the bottom of the dish.
- Top with a layer of onion; sprinkle with salt, pepper and salad herbs.
- Dot with slices of Cheddar.
- Repeat the layers, alternating the Havarti and Cheddar.
- Finish with layer of cheese.
- Cover with foil.
- Bake 35 minutes.
- Remove foil; continue baking until squash is tender and cheese is bubbly, 15 to 20 minutes.
- Let stand 5 minutes before serving.
- Makes 8 to 10 servings.
