Old Fashioned Blueberry Pie
- 1/3 c. all-purpose flour
- 1/8 tsp. salt
- 4 c. fresh or frozen blueberries, thawed
- 2 Tbsp. low-fat margarine
- 1 c. sugar
- 1/2 c. light salad oil
- 2 c. all-purpose flour
- 1/4 c. low-fat 1% milk, chilled
- Gently mix berries, 1/3 cup flour, salt and sugar; set aside. Mix milk and oil.
- Stir into flour until it forms a ball (a food processor works great).
- Divide dough in half and roll between sheets of waxed paper.
- Peel off top piece of paper and turn into 9-inch pie pan.
- Peel off other piece of paper.
- Spoon blueberry mixture into pastry shell.
- Dot with butter.
- Repeat pastry procedure and gently place on top of pie.
- Trim off excess and fold edges under.
- Cut slits in top of crust and bake at 425u0b0 for 50 to 55 minutes.
- Place strips of foil over edges of crust to prevent overbrowning.
- Serves 6.
