Braised Beef
- 1 Tbsp. oil
- 1 1/2 lb. chuck steak, cut in 1 inch strips
- 1 1/2 c. water
- 3/4 c. onion
- 1 apple, peeled, cored and sliced
- 1 Tbsp. cornstarch
- 1 1/2 tsp. salt
- black pepper
- new potatoes (small ones used whole or cut in half with peel)
- cabbage
- 1 can tomatoes
- 1 Tbsp. water
- In an electric skillet or Dutch oven, heat oil; add meat and brown lightly. Add 1 1/2 cups water, onion, apple, salt and pepper to meat. Cover; simmer over low heat for 1 hour and 15 minutes. Add potatoes and cook covered 10 minutes.
- Arrange cabbage wedges around meat and cook for 30 minutes.
- Pour tomatoes over meat and heat thoroughly. Remove cabbage and potatoes to serving dish. In small bowl, blend cornstarch with 1 tablespoon water; stir into meat. Simmer until sauce is thickened. Add to serving dish of potatoes and cabbage.
