Dixie Ham And Sweet Potato Casserole
- 2 1/2 c. mashed potatoes or yams
- 1 c. crushed peanut brittle
- 1 c. sliced leftover baked ham
- butter or margarine
- 2 Tbsp. olive oil
- 2 c. finely chopped sweet onions
- 3/4 lb. shiitake mushrooms, stems discarded and chopped (4 c.)
- 1 Tbsp. finely chopped garlic
- 1 tsp. each salt and pepper
- 2 Tbsp. chopped fresh thyme
- 2 lb. ground turkey
- 1 1/2 c. fine fresh bread crumbs
- 3/4 c. each grated Parmesan cheese and ketchup
- 3 large eggs
- 1 Tbsp. Worcestershire sauce
- 1/4 tsp. hot red pepper sauce
- 12 slices bacon, halved crosswise
- Tomato Sauce
- In large skillet, heat oil over medium-high heat. Add onions; cook 6 minutes until translucent. Add mushrooms, garlic and 1/2 teaspoon each salt and pepper. Cook 5 minutes. Add thyme; cook 1 minute until fragrant. Transfer mixture to large bowl; let cool to room temperature. Add turkey bread crumbs, cheese, 1/2 cup ketchup, the eggs, Worcestershire, pepper sauce and remaining salt and pepper. Mix with hands just until all ingredients are combined.
