File Gumbo
- 1 lb. chicken gizzards
- 1 lb. shrimp
- 1 lb. hot sausage
- 1 lb. smoked sausage
- 1 doz. oysters
- 1 lb. chicken necks
- 1/2 c. diced onions
- 1/4 c. garlic
- 1/4 c. green onion
- 1/4 c. parsley
- 1 lb. ham chunks
- 6 crabs
- salt and pepper
- 1/4 c. celery
- Saute onions, green onions, celery, parsley and garlic in small amount of fat in large pot.
- When tender, add sausages and ham.
- Simmer 15 minutes, stirring occasionally.
- Add gizzards also.
- Turn off fire.
- Peel shrimp.
- Place hulls in pan of water. Boil 20 minutes.
- Strain water into pot with other ingredients. Turn on fire.
- Cook slowly until meats are tender.
- Add shrimp, crab, necks and oysters.
- Turn off fire when necks are tender. One-half hour before serving, bring to boil.
- Add 3 tablespoons file.
- Mix well.
- Serve over rice.
