Mexican Delight
- 1 lb. ground beef
- 1 to 2 pkg. taco seasoning to taste
- 1 can cream of chicken soup
- 8 oz. Velveeta cheese
- 1 to 2 pkg. corn tortilla shells (soft), cut in half
- 1 small onion, chopped
- 1 can cream of mushroom soup
- 1 can enchilada sauce
- 8 oz. Monterey Jack cheese
- 1/2 lb. grated cheese
- Brown meat and onion; drain off fat.
- Add taco seasoning and enough water to moisten mixture.
- Mix soups and sauce together. Melt Monterey Jack cheese and Velveeta cheese together.
- In a 9 x 12-inch pan, layer as follows:
- 1/2 meat mixture, 1/2 tortilla shells, 1/2 soup and sauce mixture and 1/2 melted cheese.
- Repeat layers and sprinkle with grated cheese.
- Bake at 350u0b0 for 30 minutes or until cheese browns.
