Crowd-Pleasing Baked Beans
- 2 lb. dried Great Northern beans
- 1 c. firmly packed brown sugar
- 1/2 c. molasses
- 1 Tbsp. plus 1 tsp. dry mustard
- 1 Tbsp. salt
- 1 large onion, chopped
- 1 1/2 lb. slab bacon, cut into 1-inch squares
- Sort and wash beans; place in a Dutch oven.
- Cover with water 2 inches above beans.
- Let soak overnight.
- Cover and bring to a boil; reduce heat and simmer 45 minutes.
- Drain, reserving liquid. Add enough water to bean liquid to make 1 3/4 cups; set aside. Combine brown sugar, molasses, mustard and salt; stir well.
- Layer half of the beans, brown sugar mixture, onion and bacon in a 4 1/2-quart casserole.
- Top with remaining beans.
- Pour reserved bean liquid over top.
- Cover and bake at 300u0b0 for 5 hours.
- Yields 20 to 22 servings.
