Crowd-Pleasing Baked Beans

  1. Sort and wash beans; place in a Dutch oven.
  2. Cover with water 2 inches above beans.
  3. Let soak overnight.
  4. Cover and bring to a boil; reduce heat and simmer 45 minutes.
  5. Drain, reserving liquid. Add enough water to bean liquid to make 1 3/4 cups; set aside. Combine brown sugar, molasses, mustard and salt; stir well.
  6. Layer half of the beans, brown sugar mixture, onion and bacon in a 4 1/2-quart casserole.
  7. Top with remaining beans.
  8. Pour reserved bean liquid over top.
  9. Cover and bake at 300u0b0 for 5 hours.
  10. Yields 20 to 22 servings.
