Sweet Pickle Relish

  1. Combine cucumbers, onions and peppers in large bowl; sprinkle with salt and cover with cold water.
  2. Let stand 2 hours.
  3. Prepare home canning jars and lids according to manufacturer's instructions.
  4. Drain vegetables thoroughly; press out liquid. Combine sugar, vinegar, celery seed and mustard seed in a large saucepot; bring to boil.
  5. Add drained vegetables; simmer for 10 minutes.
  6. Carefully pack hot relish into hot jars, leaving 1/4-inch headspace.
  7. Adjust caps.
  8. Process 10 minutes in boiling water bath canner.
  9. Yields approximately 8 half pint jars.
